CHARACTER OF THE WINE

The Grande Réserve Vintage is an elegant Champagne full of lingering flavors. 

It is clear in color, with fine long-lasting bubbles.

Its nose is light and delicate, fine with hints of white blossom and citrus fruit.

Fruity on the palate, full-bodied, wine-like and long-lasting.

 

 

FOOD AND WINE PAIRING

Here are some food suggestions to pair with our Grande Réserve Vintage:

Seafood: tuna tartare, crab verrine with eggplant caviar, scallop Carpaccio, Nordic verrine.

Turf food: gougères, Chaource cheese brioche, avocado verrine, tomatoes and mozzarella.

CUVÉE BLANC DE NOIRS BRUT

CHARACTER OF THE WINE

The Blanc de Noirs Vintage is rich, hearty and meaningful.

It shows highlights of gold. Its bubbles are very fine and long-lasting.

Its nose is fresh and intense with tasty hints of gooseberry, morello cherry and fresh quince.

Dense and spicy on the palate, winey and typical of the Côte des Bar Pinots.

A very strict selection of the grapes gives this vintage a more authentic style.

 

FOOD AND WINE PAIRING

Here are some food suggestions to pair with our Blanc de Noirs Vintage:

Seafood: fresh salmon verrine with Champagne, langoustine bouchée, trout with almonds.

Turf food: Catalan-style blanquette of veal, capon in salt crust, fillet of beef with chestnuts.

This vintage goes perfectly with a meal but can also be enjoyed as a pre-dinner drink.

CUVÉE MILLÉSIMÉE BRUT 2009

CHARACTER OF THE WINE

As every year which ends in nine , this vintage wine was welcomed ; characterized by a weather report in August particularly dry and sunny, very favorable to the veraison. Small rainfalls beginning of September to grow up the grapes and at the end, again a summer time to allow the grapes to achieve their maturity in good conditions.

Adorned with a golden color, its shine highlights a fine bubble, the aromas dominated by the Pinot Noir are fine, fruity and generous.

The attack in mouth is frank, balanced because of the Chardonnay grapes with one ample and pleasant finale.

Developed with quality grapes this pleasant Champagne expresses the full complexity of this beautiful vintage wine.

Here are some food suggestions to pair with our 2008 Vintage:

Seafood: cod loin, eel stew.

Turf food: lentil and foie gras verrine, poached capon in a foie gras cream, strips of duck breast with sour wine, calf sweetbreads, Comté cheese (matured 24 months), winter Beaufort cheese.

Sweet and sensible

Delightful and light, this rosé Champagne is remarkable and does not go unnoticed.

Its intense pink color is completed with purple highlights.

Its nose is complex with red berry aromas, notably raspberry and blackcurrant.

The same tastes reveal a fresh and long-lasting Champagne on the palate.

Turf food: roasted guinea fowl with figs, fromage frais in its draining basket with a red berry coulis.

Our Douceur Vintage is sweet and mellow, with a melt-in-mouth sensation, it is a demi-sec Champagne.

This sweetness of this rich and gourmet blend reflects a careful selection of grapes picked when completely ripened, then made into a subtle, long-lasting wine with hints of honey.

 

FOOD AND WINE PAIRING

Here are some food suggestions to pair with our Douceur (Demi-Sec) Vintage: tarte Tatin, French toast with greengages, white fruit crumble (with pears and white peaches), Mirabelle plum strudel, apple croustade.

The Douceur Vintage was especially created to pair with sweets.

CUVÉE NOIR EXTRA BRUT BLANC

CHARACTER OF THE WINE

Elegant, fresh, generous and long-lasting, a reflection of the land in Les Riceys. The Noir Extra Brut Blanc vintage has a pale golden color.

With a strong elegant nose, this Champagne is incredibly balanced. Its aromas are both fruity and spicy.

These tastes come back on the palate, strong, with clear hints of citrus fruit and spices, then nuts (like almond) to leave a tasty sensation.

Besides, and that is why the Noir Extra Brut Blanc Vintage is so special, a mineral note lingers on the palate, a reminder of the Riceys land.

 

FOOD AND WINE PAIRING

A Champagne worthy of the best dishes.

As a pre-dinner drink: with lightly smoked salmon or grated truffle amuse-bouches.

With an appetizer: with caviar, a salmon terrine, oysters or sashimi.

With the main course: with a truffle risotto, a scallop and black truffle dish, a seafood platter or Peking duck with roasted pears.

CUVÉE NOIR EXTRA BRUT ROSÉ

CHARACTER OF THE WINE

The Noir Extra Brut Rosé, with its nice pink color with shades of tile-red, has an intense nose. It has a strong character whilst being sophisticated and dominated by aromas of red berries.

This light Champagne starts with hints of gooseberry. It then gets stronger on the palate with a mineral note typical of the Riceys land.

 

FOOD AND WINE PAIRING

As a pre-dinner drink: simply with terrine or potted duck with toast.

With an appetizer: goose foie gras with brioche, scallop blanquette.

With the main course: fowl stuffed with mushrooms, warm foie gras with fruit (apples, grapes), game with cranberries or gooseberries.

With cheese: Langres cheese pasty.

With the dessert: desserts with red berries (pies, mousses).

ROSÉ DES RICEYS 2009

CHARACTER OF THE WINE

Traditionally harvested in the La Forêt hamlet on a fantastic sunny hillside, our 2009 Rosé des Riceys is now at its very best.

With a mix of shiny ruby color and topaz highlights, it looks dark and intense. Its nose is surprising with hints of red berries and quince paste. Strong on the palate, it has a lovely acidic taste with fine and delicate tannins.

This authentic 2009 Rosé des Riceys is the perfect wine to pair with a meal and an original pre-dinner drink.

Here are some food suggestions to pair with our 2009 Rosé des Riceys:

Seafood: sea bream with lentils, cod loin and langoustines, roasted scallops.

COTEAUX CHAMPENOIS ROUGE 2012

CHARACTER OF THE WINE

 

This Northern Pinot Noir is deep red.

The red berry, cherry and blackcurrant aromas are highlighted by woody notes.

Supple on the palate, the tannins are soft. The result is well-structured and reminds us of the time when this area mainly produced red wines.

 

FOOD AND WINE PAIRING

Here are some food suggestions to pair with our 2009 Coteaux Champenois red wine:

With the main course: salmis of woodpigeon, coq au vin Coteaux Champenois, fillet of beef with green peppercorns, Champagne hotpot.
